Ingredients

125 g/ 4 1/2 oz butter, softened
150 g/ 5 1/2 oz chunky peanut butter
225 g/ 8 oz granulated suguar
1 egg, beaten
150g/ 5 1/2 oz plain flour
1/2 tsp baking powder
pinch of salt
75 g/ 2 3/4 oz unsalted natural peanuts, chopped

Directions

* Lightly grease 2 baking trays or cookie sheets.
* In a large mixing bowl, beat the butter and peanut butter.
* Gradually add the sugar and egg and mix well.
* Add the egg a little at a time to prevent curdelling
* Sueve the flour, baking powder and salt into the peanut butter mixture.
* Add the peanuts and bring all of the ingredients together to form a soft dough. Wrap and leave to chill for half an hour.
* Form the dough into 20 small balls and place them on to the prepared baking trays anbout 5 cm apart. Flatten slightly with your hand and ensure that no 2 cookies are touching. For cruchy biscuits, sprinkle some suguar on the top of each.
* Bake in a hot oven Gas mark 5 for 15 minutes until golden. After baking leave to cool on a wire rack.
